We’ve just spent the past two weeks on school holidays.  It’s one of the first holidays that I haven’t stressed about keeping the kids busy.  It was nice and relaxing and for once, the holidays seemed to go a little slower than they usually do.  The kids played a lot of tennis and spent a lot of time at the park, and they had their fair share of Minecraft sessions as well.  I spent a lot of time not caring about making lunches or getting to school on time and got obsessed with The Sims FreePlay app!  Don’t even ask!

I had absolutely no time over the past two weeks to post the recipe for that coffee banana smoothie I instagrammed before school holidays, though, and this is what I’m going to do today.  It’s been difficult to get out of bed earlier and get back in the swing of things, now that school has returned, but the quicker I get over it, the quicker I can actually get back into gear!

This smoothie uses a handful of healthy ingredients and would make an excellent and quick on-the-go breakfast.  The recipe can easily be adapted for different dietary needs, as well, so it can be loved by everyone.

First up, you’re going to need to prepare a little bit in advance and freeze some bananas.  Also, you’re going to need some chilled espresso, and this is where Nespresso‘s newly reinvented Fortissio Lungo comes in.  A few weeks, Nespresso sent me a hefty parcel full of Fortissio Lungo and a variety of ingredients to inspire me to create some recipes.  Earlier I made these beautiful amaranth cinnamon rolls with coffee glaze.  My next idea was this breakfast smoothie made with some of those ingredients.

When the bananas are frozen and your espresso has been chilled, add them to a blender, along with some Greek yoghurt, milk of your choice, cocoa powder and a touch of sweetener of your choice.  Then simply blend until completely smooth and then serve.

And there you go, an easy and delicious breakfast smoothie that is healthy and will also give you that caffeine hit if you’re a morning coffee drinker.  So what are you waiting for, go ahead, take a sip!
