Now, on to our Valentine’s Day cupcakes. They did not turn out how I planned. I planned for nice, fluffy, high-rising chocolate chocolate chip cupcakes with cherry cream cheese frosting. But three things went wrong. 1) I forgot to put in the chocoalte chips!; 2) the cupcakes didn’t rise very much at all; 3) I wanted to use heart sprinkles, but didn’t have any. I think they didn’t rise because I cut the recipe into thirds and perhaps it messed up the properties of the baking soda and baking powder. I’m not sure. Anyhow, they still taste nice.

The recipe for the cupcake was Hershey’s Perfectly Chocolate Cake, and the cream cheese frosting recipe comes from How To Eat A Cupcake (and I also cut her recipe in half). I just added a tiny dollop of red gel food coloring, and approximately 3-4 tablespoons of chopped maraschino cherries to her recipe.

Colored and designer cupcake liners are currently very popular and also very hard to find. The best place to find colored liners is Confectionery House. But I have just found another online shop, called Cupcake Swirl, offering hard to find brown cupcake liners, with cheap and fast shipping. I placed an order for their brown cupcake liners on Thursday and received the order today, Monday.

Cupcake Talk

This past week I had my first cupcake failure! I had decided to try out my idea for this month’s Iron Cupcake Earth’s challenge ingredient of basil, but my cupcakes sank, I didn’t have enough basil and I didn’t fully understand how to make Swiss meringue buttercream. I was so devastated, but I have gotten past that and am ready to start again.

On my next try however, I will be using some new equipment. Inspired by How To Eat A Cupcake, we placed an order for a gloss cinnamon Kitchenaid stand mixer.

We’ve also placed an order for 2 Wilton cupcake pans (hoping to get some pans that will give my cupcakes straighter, rather than slanted, sides), a decorating kit, those infamous nut & party cups and believe it or not, chocolate-brown cupcake liners. I’m extremely excited and can’t even get to sleep at night for thinking about it!

I also have plans to bake 2-3 dozen cupcakes to sell at a neighborhood rummage sale, but not actually sure if I’ll have the time to bake that many (my two young children keep me too busy!). But if I get around to it, that is definitely something I am looking forward to.

This is old news, and I’m sure everyone’s already seen these before, but I feel I need to post it since it concerns cupcakes – giant ones! Of course I’m talking about Wilton’s Giant Cupcake Pan.

I’ve been tossing around the idea of purchasing one, but I just can’t bring myself to do so. The giant cupcake sort of ruins what cupcakes are all about – small, mini cakes. I have seen some very beautifully decorated giant cupcakes, however.
