Cupcake Hero: The Winner Is…

Today has been a really hot day in Sydney; the temperature has reached nearly 95F. It’s a good thing I did all my baking yesterday, when it wasn’t so hot! We did do our taste-testing today, however. To our Cupcake Hero throw-down contestants, I congratulate you again, as well as commend you for your efforts in making these cupcakes. Both of them have extra steps that makes them both extra special.

For our vote-winner, the batica from Sugar Plum of Vanillastrawberryfields, we are required to use a fresh coconut and grate it down (which is a bit of work!) and then to let the cake batter sit for at least four hours. The recipe was a little hard to understand, mainly because it’s not made in a traditional manner, but this is what made it special. What we liked about it is that it is very unique and traditional. It was definitely a moist cake with a lovely coconut flavor. 2 out of my 5 taste-testers preferred Sugar Plum’s batica.

For our competitor, the coconut rough cupcake from Catie of Catie’s Cakes & Cookies, the extra steps were the preparation of the chocolate-coconut nests and the coconut malibu truffles. Making these two particular things is not an easy task when it is so hot; a lot of refrigeration was necessary! When all was done and everyone had messy fingers!, the taste-testers really liked the chocolate-coconut nests and the gooey-ness of the truffles. This is what made these cupcakes so special. So special in fact, that 3 out of my 5 taste-testers preferred Catie’s coconut rough cupcakes.

This means that our winner in the throwdown by just one vote is Catie of Catie’s Cakes & Cookies!

Once again, I want to also congratulate you again Sugar Plum and everyone else who entered their coconut cupcakes!

Cupcake Hero: The Throwdown

Thank you to everyone who cast their vote for December’s Cupcake Hero!  A total of 71 people voted and the winner, with 44% of the votes, is the Batica from Sugar Plum of Vanillastrawberryspringfields! Congrats to Sugar Plum for receiving the winning number of votes!

However, as you all know, it’s not over yet.  Sugar Plum’s cupcake must first enter a throwdown with the cupcake of my choosing.  My taste-testers will then decide whose coconut cupcake will win December’s challenge.  So whose cupcake have I chosen?

Cupcake Hero: Coconut!

October’s Cupcake Hero finished on a somewhat dramatic note.  In case you don’t know the story, catch up on this post at I Heart Cuppycakes.  To sum it up, it ended in a tie between me and Samantha of Sweet Remedy.  How we resolved that tie was left up to readers of I Heart Cuppycakes; a commenter suggested that one person receives the prizes and the other gets to host Cupcake Hero in December.  So, I happily offered the prizes to Samantha as I am moving to Australia next week and thought it might be confusing about where to send prizes to, and now I get to host Cupcake Hero for this month!  I am so excited!

After some serious thinking and a lot of suggestions, I decided that I’d like to see COCONUT CUPCAKES in December!

Chocolate, PB, Toffee, Bacon Cupcakes

Wow, the title of this post is a mouthful!  If you can think of an easier name for these cupcakes, just let me know!  These cupcakes were created for November’s Cupcake Hero challenge ingredient, peanut butter.  I’ve already entered one cupcake into the competition this month, but I just love peanut butter so there was no way I could only enter just one.

My second entry is a chocolate cupcake with chocolate chips and finely chopped crispy bacon baked inside.  It is frosted with peanut butter frosting, sprinkled with finely chopped toffee and topped off with a square of crispy bacon.

Chocolate Peanut Butter Cup Cupcakes

This month’s theme ingredient for Cupcake Hero is peanut butter.  Peanut butter is one of my favorite foods and a definite staple in our kitchen cabinets.  I had a couple of ideas for a peanut butter-themed cupcake and this post will show you my first one, the chocolate peanut butter cup cupcake.  I realize that the chocolate and peanut butter combination will probably be quite popular in the competition, but they just taste so great together that I figure that one can’t have enough chocolate and peanut butter cupcakes!  I’m not sure if I’ll get around to my second idea, as we’re preparing to move overseas at the end of the month so we’ll be quite busy.

It might come as no surprise that the inspiration for my chocolate peanut butter cup cupcake came from Reese’s Peanut Butter Cups, one of my favorite foods in the candy aisle.

My peanut butter cupcake is covering himself in a chocolate peanut butter shell that also holds a pool of creamy peanut butter in the bottom.  The cupcake is double-coated with chocolate ganache and a little peanut sits on top. Read more

Zombie Halloween Cupcakes

A couple of weeks ago I was leisurely browsing through Bake It Pretty, in particular the Halloween decorations.  When I saw the zombie hand cupcake toppers, I knew I had to order them and make a batch of Halloween cupcakes.  I have never made a Halloween cupcake before; the closest I’ve came were these pumpkin cupcakes with cinnamon cream cheese frosting, but they weren’t exactly scary!
