White Chocolate Mocha Cupcakes

Our 3 years back in the US have been great, but it’s time to settle down and raise our kids in one spot.  As hard as it is to leave your family behind, it’s something that happens every day; kids grow up and leave their families behind to start their own life.

I’m leaving my family behind here in Indiana and moving to Sydney, Australia this weekend.  I have lived in Sydney before, from 2001-2006 and it was fabulous.  It’s definitely a place I feel happy spending my life in.  I know my kids will love it as well.

This will be my last post from the US; expect all future posts to be from Australia and upside down!  :D

Anyway, a friend of mine requested one last batch of cupcakes from me before we left.  She wanted cookie dough cupcakes and chocolate/white chocolate cupcakes.  Of course I’ve done cookie dough cupcakes before, so I won’t post about them again, but I made the chocolate/white chocolate cupcakes into white chocolate mocha cupcakes.  I was inspired to do this because my friend is a big fan of Starbucks’ white chocolate mochas.  These were the last cupcakes I made in the US.

I know, the photos aren’t that great because it was late afternoon and there wasn’t enough natural light from the sun so I didn’t even bother with my usual set up.

These are chocolate cupcakes, filled with chocolate coffee ganache and frosted with white chocolate Swiss meringue buttercream (SMBC).  I’m really proud of these because while most mocha cupcakes have coffee in the cake where it cannot be tasted, I put my coffee into the ganache and the coffee flavor is quite prominent.  This isn’t just any chocolate coffee ganache, by the way.  It was made using the brand new Starbucks VIA Italian Roast instant coffee.

The white chocolate really came through in the SMBC, as well.  SMBC is always an extra effort to make, but the results are so rewarding.  The texture was silky smooth and full of white chocolate flavor.

My main point of this post is to share the coffee ganache tip with you.  If you want coffee flavor in your cupcakes, don’t put the coffee in the cake (or well, you can, just be aware that the taste isn’t going to be very noticeable) – fill the cupcakes with coffee-flavored ganache!

If you’d like to try the ultimate white chocolate cupcake, the recipes are below.  Just choose your own favorite chocolate cupcake recipe (mine is Hershey’s or Martha’s Devil’s food cupcakes) and follow these recipes.

Chocolate Coffee Ganache Filling
Adapted from Smitten Kitchen
Makes enough to fill 12 cupcakes (with a little leftover)

Ingredients
4 ounces semisweet chocolate
1/3 cup heavy cream
1 packet Starbucks VIA Italian Roast
1 tablespoon butter, room temperature

Method
Chop the chocolate and transfer it to a heatproof bowl. Heat the cream until simmering then empty the packet of Starbucks VIA into the cream and stir until dissolved.  Remove from heat and pour the cream over the chocolate. Let it sit for one minute and then stir until smooth. (If this has not sufficiently melted the chocolate, you can return it to a double-boiler to gently melt what remains. 20 seconds in the microwave, watching carefully, will also work.) Add the butter and stir until combined.

White Chocolate Swiss Meringue Buttercream

Makes enough to frost about 18 cupcakes

Ingredients
1 cup sugar
5 egg whites
18 tablespoons unsalted butter, softened slightly and sliced
1/4 cup white chocolate, melted and cooled

Method
Cook the egg whites and sugar in a small saucepan over medium heat, whisking constantly, until the sugar is completely dissolved (test by rubbing some between your fingers. If it’s completely smooth, it’s done).

Pour into another bowl (a stand mixer is preferable) and whip on high speed until room temp.

Then, on a medium-slow speed, add the butter, waiting until each piece is completely incorporated before adding the next. The buttercream may turn into a soupy curdled mess, but I assure you it will be ok; just beat it for a few minutes longer. It’ll come together!

When the buttercream has reached the ideal consistency, add the melted and cooled white chocolate carefully. Try not to get any on the walls of the bowl as it will cool and harden there. Whip to incorporate.

Matcha Strawberry Cupcakes

This is my third and final entry into Iron Cupcake: Earth this month.  This is also my favorite entry, matcha strawberry cupcakes.

I loved this cupcake!  It is one of the best I’ve made in ages.  The cake is a basic vanilla cake, borrowed from Billy’s Bakery, flavored with matcha, or green tea, powder.  Inside the cupcake is a filling of strawberry preserves, for a big strawberry taste.  Swirled on top is fresh strawberry Swiss meringue buttercream, which is really lovely.  It also does actually taste like strawberries, unlike my first strawberry cupcake entry, which used heaps of strawberry puree but did not taste like strawberry.

This cupcake, however, did taste like strawberries and matcha.  With one bite you will first taste the strawberry.  After that bite is swallowed, the flavor of the matcha hits.  I really really love this cupcake, but I think I’ve already said that!

I used Billy’s vanilla cupcake recipe because this is my favorite vanilla cupcake recipe.  They always come out moist and soft and were perfect for the addition of matcha – I just added the powder to the dry ingredients.

The buttercream comes from Martha Stewart.  It takes a lot of mixing to make this particular buttercream, so a stand mixer is a necessity.  The buttercream came out perfectly and the softness of it matched well with the moist cake.

I divided both of these recipes in half, which is why some of the ingredient amounts in the recipe may look a bit funny.

Here are the recipes I used to make these cupcakes…

Matcha Cupcakes
Adapted from Billy’s Bakery & Martha Stewart
Makes 12 cupcakes

Ingredients
3/4 cup + 2 tablespoons cake flour, not self-rising
1/2 cup + 2 tablespoons all-purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon fresh matcha powder
1/2 cup unsalted butter, softened, cut into 1-inch cubes
2 large eggs
1/2 cup whole milk
1/2 teaspoon pure vanilla extract
Strawberry jam or preserves

Method
Preheat oven to 325 degrees. Line cupcake pans with paper liners; set aside.

In the bowl of an electric mixer fitted with the paddle attachment, combine flours, sugar, baking powder, salt and matcha powder; mix on low speed until combined. Add butter, mixing until the cubes of butter are peanut-sized or a little smaller.

In a large glass measuring cup, whisk together eggs, milk, and vanilla. With mixer on medium speed, add wet ingredients in 3 parts, scraping down sides of bowl before each addition; beat until ingredients are incorporated but do not overbeat.

Divide batter evenly among liners, filling about 2/3 full. Bake until a cake tester inserted in the center comes out clean, 17 to 20 minutes.

Transfer to a wire rack to cool completely. Once cupcakes have cooled completely, using the cone method, fill cupcakes with strawberry jam or preserves.

Strawberry Buttercream
Adapted from Martha Stewart
Makes about 2 1/2 cups

Ingredients
2 large egg whites
1/2 cup + 2 tablespoons sugar
1 1/2 sticks unsalted butter, softened, cut into small pieces
3/4 cup fresh strawberries, pureed

Method
Place whites and sugar in a heatproof mixer bowl set over a pot of simmering water. Whisk until sugar dissolves and mixture registers 160 degrees on a candy thermometer.

Remove from heat, and attach bowl to a mixer. Whisk on medium speed for 5 minutes. Increase speed to medium-high, and whisk until stiff, glossy peaks form, about 6 minutes. Reduce speed to medium, and add butter, 1 piece at a time, whisking well after each addition.

Switch to a paddle attachment. With mixer on low, add strawberry puree, and beat until smooth, 3 to 5 minutes. Use immediately, or cover, and refrigerate for up to 3 days.  Bring to room temperature, and beat on low speed until smooth before using.

Because of the egg whites and jam in these cupcakes, it is best to store them in the refrigerator.  Let them return to room temperature again before enjoying.

Banana Cupcakes With Caramel Buttercream

The first cupcakes I decided to try from February 2009′s issue of Martha Stewart Living were the banana cupcakes with caramel buttercream.

And they are really yummy!  The cupcakes: they ended up more muffin-like in texture than I expected; they are soft and moist; they did not rise much while baking; they have an extreme banana taste; they don’t need frosting on them, they taste amazing.  The frosting: was a little bit daunting, seeing as how there are so many steps, but was actually quite easy as I went along; is actually a caramel Swiss meringue buttercream; is best prepared with a stand mixer; tastes beautiful.

Just a tip for the buttercream… the directions say to make the caramel first.  I had read on the comments section of the recipe that the caramel becomes hard by the time you add it to the buttercream, which is the very last step.  Of course you want the caramel to be cool, but you also don’t want to hard bits of caramel in your frosting.  What I did was stir the caramel occasionally as I went through the steps and kept it near, but not on, the burner I had cooked it on, to keep it a little bit runnier.  It was quite cool by the time I added it to the buttercream, but chunks of caramel still formed in the buttercream.  This was basically solved by just beating with the mixer at a speed higher and beating for a little bit longer, although there were still a few caramel chunks.  Personally, I don’t mind them, however – this caramel is simply dreamy!

And one other tip – the more caramel buttercream you put on the cupcakes, the better!  The banana and caramel combination is a lovely taste.

Matcha Cocoa Cupcakes

I made this cupcake intending to enter it into December’s Iron Cupcake Earth challenge Chocolate With A Twist. Then after I made it I thought it wasn’t good enough. It tasted great, but I didn’t think it was the worthiest contender. Then as I keep looking at them sitting there in the kitchen I thought, what the hay, I’ll enter them! Here is the matcha cocoa cupcake.

Yes, I need to work on my piping skills, I know! :)

I call it the matcha cocoa cupcake, because it does taste similar to the matcha hot cocoa recipe I enjoy. The chocolate cake in these cupcakes are very chocolatey, and the matcha is very matcha-y. The cake is dense and heavy and quite filling.

The dark chocolate ganache is a nice touch, and the matcha Swiss meringue buttercream is to die for. This is my second attempt at making SMBC (my first attempt failed) and it went really well. The texture is amazing, almost mousse-like. It pipes really well. The matcha taste in the SMBC is not overpowering and adds an extra light matcha flavor.

Recipes:

Chocolate & Matcha Marbled Cupcakes
(adapted from La Tartine Gourmande)
makes 10-12 regular sized cupcakes

Ingredients
8 Tbsp butter, melted (1 stick)
3 oz dark chocolate, melted
3 eggs, large
3/4 cup sugar
3/4 teaspoon vanilla extract
3/4 + 2/3 cups flour, sifted
1 tsp baking powder
Pinch of salt
1.5 tsp sifted unsweetened cocoa, diluted with 2 Tbsp whole milk
1.5 tsp Matcha powder

Method
Preheat oven to 350 degrees.

Melt the butter and set aside. Melt the chocolate using a double-boiler.
Beat the eggs with the sugar until blended. Add the melted the butter and vanill extract and mix well.

In a separate bowl, sift together the flour, baking powder and salt and add to the butter/egg mixture. Beat until blended, but do not overbeat.

Divide the batter in two halves. In the first half, add the Matcha tea, in the second the chocolate and cocoa diluted in milk. Stir each half until thorougly incorporated.

Spoon chocolate mixture into cupcake liners, and spoon matcha mixture on top of the chocolate. Fill liners about 1/2 – 2/3 full. You can use a toothpick or knife to gently stir the colors together for a marbled effect, or you can leave as is.

Bake in a preheated oven for 20-22 minutes. Test with a toothpick to make sure they are done.

Chocolate ganache

Ingredients
3oz dark chocolate
3oz heavy whipping cream

Method
Heat the whipping cream and chocolate in a small pan over low heat unti melted. Do not boil. Remove from heat and sit aside until cooler. Dip tops of cupcakes into the ganache and sit aside to let ganache harden, or put into the refrigerator to harden it quicker.

Matcha Swiss Meringue Buttercream
(method adapted from How To Eat A Cupcake)

2.4oz egg whites
4.8oz sugar
5.3oz unsalted butter, room temperature
1.5 tablespoons matcha (use more or less to suit your taste)

Method
Put egg whites and sugar into the top of a double boiler over a pan of simmering water. Whisking constantly, cook until sugar has dissolved and mixture is warm (about 160 degrees).

Pour heated egg whites into the bowl of an electric mixer fitted with the whisk attachment. Beat egg white mixture on high speed until it forms stiff (but not dry) peaks. Continue beating until fluffy and cooled, about 7 minutes.

Switch to the paddle attachment. With mixer on medium-low, add butter two tablespoons at a time, beating well after each addition. Increase speed to medium-high; continue beating until frosting appears thick, about 3 minutes. Reduce speed to low; add matcha powder and continue beating 2 minutes to eliminate air bubbles.
