Self-Saucing Dark Chocolate Puddings

These dark chocolate self-saucing puddings are super easy and perfect for chilly winter evenings.

  • ½ cup (75g) plain flour
  • 1½ tablespoons almond, or hazelnut, meal
  • ¼ cup (45g) brown sugar
  • 1½ teaspoons baking powder
  • 2 tablespoons best quality cocoa powder
  • ½ cup (125ml) milk
  • 35g butter, melted
  • 1 egg, lightly beaten
  • 1 teaspoon pure vanilla extract
  • 1½ tablespoons best quality cocoa powder, extra, sifted
  • ½ cup (90g) brown sugar, extra
  • 1 cup (250ml) boiling water
  1. Preheat oven to 180°C (355°F).
  2. Sift the flour, almond (or hazelnut) meal, sugar, baking powder and cocoa powder into a bowl. In a separate bowl, combine the milk, butter, egg and vanilla. Add to flour mixture and mix well.
  3. Spoon into 4 x 1 cup-capacity (250ml) oven-proof dishes and place on a baking tray. Place the extra cocoa powder and sugar in a bowl and mix to combine. Sprinkle evenly over the puddings and carefully and gently pour over ¼ cup of boiling water per pudding.
  4. Bake for 12 to 15 minutes or until the tops are just firm.
